Chicken with Avocado and Roasted Red Pepper Salad


Ingredients :


2 cups thinly sliced chicken breast cut in bite size
1 medium size riped avocado, peeled and cubed
1 large red bell pepper
10 cherry tomatoes cut in half
1 scallions, thinly sliced
5 cups mixture of assorted greens (lettuce, baby spinach, and etc.)

Dressing Ingredients :


1 tablespoon dijon mustard
1 tablespoon lemon juice
1 tablespoon wine vinegar
4 tablespoon olive oil
Dash with salt and pepper

Cooking Method :

Broiled or grilled large red bell pepper until charred for about 10 minutes. Cut it in half, remove seeds and cut lengthwise.

Mix all the salad ingredients in a large salad bowl. Whisk in the vinaigrette ingredients into your salad. Toss all the ingredients together, season with salt and pepper to your taste. Now your happy salad meal is ready to serve.
