Santa's Best Pork Ribs
2 (250 grams) pork ribs cut in 6 pcs.
1 can sprite or 7up
1 medium size onion minced
1 1/2 tbsp garlic minced
1/4 cup puree tomato or ketchup or tomato paste
1 tsp hot sauce
1 1/2 tbsp brown sugar or 3 tbsp honey or
maple syrup
4 tbsp olive oil
2 tbsp butter
1 1/4 apple cider vinegar
1 1/2 tbsp lemon juice or one whole lemon
1/4 cup soy sauce
Salt and pepper
Lemon slice, parsley and red bell pepper
for garnishing
Cooking Method:
Remove extra fat from the pork ribs and
marinate the ribs overnight for best
result or at least 2-3 hours before
cooking. Place pork ribs on a marinating
container, squeze some lemon juice on the
meat, pour soy sauce, 1 can sprite or 7up,
add the garlic and brown sugar. Mix it
thoroughly with your hands.
After marinating, place the whole mixture
in the cooking pot and let it boil for
about 12 minutes. Add tomato paste, hot sauce,
salt and pepper. Let it simmer and occasionally
mixing it until most of the liquid has evaporated.
The sauce starts to get thicker, add 1 tbsp butter
and 2 tbsp olive oil.
Let it simmer until the sauce is almost gone
and the meat is cooked and tender. Transfer
the ribs in the buttered baking dish and
broil it for about 6-8 minutes until medium
brown while occasionally basting it with
olive oil and some sauce from the pot.
On your serving platter arrange your ribs
and put the remaining thick sauce on top
of the ribs.
Garnish with lemon slice, parsley
and slice red bell pepper.

Rudolf's Corn Cheese Tarts
2 eggs,
1/2 cup corn syrup,
1/2 cup condensed milk,
1 cup grated sweet corn
or blended frozen corn,
1/4 cup parmesan cheese
( grated ),
1/2 cup sugar,
1/2 tsp salt,
2 tbsp melted butter,
24 pastry of 2" tarts
Cooking Method :
Beat eggs and mix all other ingredients.
Spoon into each tart shells. Preheat
oven and bake tarts at 350 degrees oven
temperature for about 25 to 30 minutes.
