Ice Cream Bunny Cake Dessert Recipe
Compliments of Makin' Memories Cookbook
1 gallon ice cream
1 box cake mix
Decorations: 3 pink jellybeans or gum drops,
1 bag coconut,
1 bag jelly beans,
black shoestring licorice
PREHEAT OVEN ACCORDING TO DIRECTIONS ON CAKE MIX.
1. Bake your favorite layer cake. Mix according to directions on box. Bake in 2 9-inch cake pans.
2. Cool. (Freeze one layer for future use.) Cut the other layer in half. Place the layers together. With a sharp knife, cut a notch about 1/3 of the way around the semicircle, forming a rabbit's head. Save cut out pieces for tail.
3. Line a 9-inch baking pan with plastic wrap. Press ice cream into pan and re-freeze.
4. Cut circle of icecream in half to match cake halves.
5. Gently lay one layer of cake on top of ice cream. Using a sharp knife, cut out notch.
6. Layer cake, ice cream, then cake.
7. Stand cake upright on cut edges on a cake plate, add tail using a toothpick to attach. Return to freezer.
8. Frost with remainder of ice cream. (Let ice cream soften, just a little, and mash with a fork to ease spreading and ice cake very quickly.) Return cake to freezer.
9. To decorate, make ears of white construction paper; color inside pink with crayons. Use pink jellybeans or gum drops for eyes and nose. For whiskers,use black shoestring licorice.
10. Place in a Zip-loc bag and freeze until the Easter party.
Tip: Green tinted coconut (grass) and a few jellybeans form an attractive nest around bunny.
Note: To omit ice cream, frost cake layers and cake with a white frosting. Sprinkle generously with shredded coconut.
