Mexican Chicken Burgers Recipe
Compliments of Makin' Memories Cookbook
Seasoned with salsa and topped with a thick strip of melting cheese, these zesty burgers are served in soft tortillas. 1 pound ground chicken
3 ounces Monterey Jack or Cheddar cheese, cut in four 3X1-inch pieces
1/4 teaspoon pepper 1 cup fresh bread crumbs (from 2 slices bread) 1 cup corn kernels 1/2 cup salsa, divided
4 burrito-size tortillas, softened
1 ripe avocado, peeled, pitted, and thinly sliced 1 teaspoon ground cumin 1 cup shredded lettuce 1/2 teaspoon salt
1. In a large bowl gently combine ground chicken, bread crumbs, corn, 1/4 cup salsa, cumin, salt, and pepper. With moistened hands, form mixture into 4 oblong patties measuring about 5 1/2x2 inches.
2. Broil or grill 4 to 6 inches from heat source 7 to 8 minutes. Turn burgers and broil an additional 5 minutes; place a piece of cheese on each burger and cook 1 more minute. (Cheese will not melt completely.)
3. To make tortillas more flexible and easier to roll, place them between 2 damp microwave-safe paper towels and microwave on high 20 seconds.
4. To serve, spread remaining 1/4 cup salsa over the four tortillas and arrange lettuce and avocado slices in center.
5. Place a burger on top of vegetables and roll up tortilla, tucking in sides as you roll to form a neat package. Cut on a diagonal before serving.
