QUICK MEXICAN FILLING

This mild filling is perfect for many Mexican meals-everything from burritos to soft tacos, nachos, and even party dip (too thin for hard taco shells).

Pick the entre that suits you. Add the wrapper, toppings-shredded lettuce, diced tomato and condiments, even a few jalapenos.

1 teaspoon vegetable oil
1 (10 3/4-ounce) can tomato soup
1 large onion (for 1 cup chopped)
2 cups shredded cheddar cheese
1 pound lean ground beef (93% lean)
1 (8-ounce) container reduced-fat sour cream
1/2 package (2 tablespoons) taco seasoning

1. Heat the oil on medium-high in an extra-deep, 12-inch, nonstick skillet that has a lid.

2. Peel and coarsely chop the onion, adding it to the skillet as you chop.

3. Add the beef and raise the heat to high. Cook, stirring frequently, until it is browned (about 4 minutes).

4. While the beef cooks, stir in the taco seasoning.

5. Reduce heat to medium-low. Stir in the tomato soup until well blended. Stir in the cheese until it melts, about 30 seconds.

6. Remove the skillet from the heat and stir in the sour cream until well combined.

7. Use as a filling for Mexican entre
