SNOWY HALIBUT

Ingredients :


4 halibut steaks ( 6 oz each )
2 bay leaf
6 peppercorns
1/2 pint white wine
salt and pepper to taste
butter for the baking dish

White sauce : milk and two eggyolks

Garnishing : lemon slices and chopped parsley

Cooking Method: Wash the fish with a mixture of half vinegar and half water to remove its natural fish smell while adding extra taste to your recipe. Place the halibut steak in a buttered baking dish, with bay and peppercorn. Pour over the white wine. Dash with salt and pepper about 2 pinch. Cover and bake in 350 degrees temperature oven for about 20-30 minutes. Remove the fish and place it on a serving dish. keep warm.

Strain the fish liquor and make up to 1/2 pint with milk. Using the fish liquor allow to cool slightly and stir in the eggyolks. Reheat without boiling and pour into a sauceboat.

Garnish the fish with lemon slices and chopped parsley and serve the sauce separately.

SAVORY PRAWN BALLS

Ingredients :


4 oz peeled prawns
1 lb raw cod or haddock
2 tbsp lemon juice
1 tbsp tomato puree
5 oz flour
Oil for deep frying

Note: this recipe serves 4-6 persons

Cooking Method :

1.) Flake raw fish, add the chopped thawed prawns. Add the lemon juice and tomato puree. Mix the flour into the mixture thoroughly. Divide into 32 portions and roll into a small balls.

2.) Drop each ball into hot frying pan with oil for 3-4 minutes until evenly brown. Serve on cocktail sticks with mayonaise and tomato dip.

3.) Tomato dip ( 1 tbsp lemon juice, a dash of perrins sauce and 1/4 cup of tomato ketchup.)

GARLIC CHEESE

Ingredients :


8 oz cream or curd cheese
2 cloves garlic finely chop
2 tsp mustard
2 tbsp of milk

Cooking preparation:

Beat cream cheese, stir in mustard and garlic. Mix to soft dipping consistency with milk. Serve with potato crisp or celery sticks.
