Salmon on Citrus Medley Salad
Ingredients :
450 grams salmon steaks (4slices)
5 cups mix greens (lettuce, baby spinach, etc.)
2 tangerine orange, peeled and seeded
1 red grapefruit, peeled and seeded
1 red bell pepper, seeded and chopped
1 jalapeno pepper, seeded and chopped
1/4 cup chopped fresh basil
2 tablespoon lemon juice
1 tablespoon of chopped red onions
Cut tortilla chips for garnishing
Cooking Method :
In a large bowl, combine cut pieces of tangerine
orange and grapefruit. Stir in the other ingredients,
refrigerate for a day or can be serve immediately also.
Wash salmon steaks with 1/2 part water and 1/2 part
vinegar, squeeze some lemon juice on each salmon steak,
sprinkle with salt ang pepper on each side of your salmon
steak, spoon a little bit of olive oil on each salmon.
Broiled or grilled salmon in the oven for about 15-20
minutes or until fish is cook. Place cooked salmon in a
cutting board, cut it into cubes or any of your desired
cut, set aside.
In a large salad serving bowl arrange all mix greens
and cut tortilla chips on the sides of your bowl, place
your citrus medley mixture at the center of your mix
green and place your broiled salmon or grilled salmon
on top of your salad. Savour the tangy citrus taste.
It's up to you if you want to add some dressing on this
salad recipe. But the refreshing taste of the citrus blend
is good enough mixture to enjoy this superb salad.
